Quick Chicken Soup – Easy, Quick and Delicious

As the autumn weather draws in and it starts to get a little chillier is there anything nicer than a comforting bowl of chicken soup?  If you have maybe fancied making a homemade chicken soup, but always thought it was too involved and would take too long then think again!  There is no need to reach straight for the tinned or carton version when you have this quick chicken soup recipe as it doesn’t take much longer than opening the tin and heating it…  Well it takes around 20 minutes to make, but is beyond delicious and is very easy so is the perfect lunch option…

Why Make your Own Chicken Soup?

This is a valid question.. Why would you make our own chicken soup when you could just buy one?  Basically because you will know exactly what is in it.  Chicken Soup is renowned for having health benefits, but with processed and salty store bought options some of the goodness must go.  A homemade quick chicken soup is the answer.  This one genuinely takes no more than 20 minutes to prepare and it is so worth it.

The recipe quantities given below are for one person, but you could easily multiple the quantities up and batch cook so you could freeze the soup in portions.  It will still taste fantastic, but for me it is so quick to make that it can be done fresh.  This quick chicken soup is perfect for the whole family and is also keto friendly.   It is only 6 steps and if you can chop and stir you can make it!  It is that easy…

What ingredients are in chicken soup?

This super quick chicken soup only contains 10 ingredients and many of those like chicken breast, butter, stock cube, onion, carrot and water you will more than likely have in your store cupboard at home. 

What can I add to my chicken soup to give it flavor?

This is a question I have often seen as chicken soup can sometimes be bland, but not this one!  My super quick chicken soup also contains cream cheese and Sriracha Chilli Sauce which makes it a bit different from other homemade chicken soup recipes and I think way tastier! 

No matter what recipe you choose for making your homemade chicken soup from scratch it will undoubtedly have more flavor than a store bought version and you can definitely enhance this by adding the parsley.  It is optional, but I do think gives the soup more depth of flavor.

Simple Chicken Soup Recipe

Remember this is the quantity for one person, but can be easily multiplied up to make larger amounts.  If you decided to serve the soup with a great big hunk of homemade bread (or shop bought ;)) then these quantities would easily feed two people for a lunch.  Also whilst I have specified oregano and parsley as the herbs don’t be afraid to experiment.  I think this would work well with coriander as well especially if you added extra chilli sauce or even a fresh chopped chilli.

1 Chicken Breast

3 tbsp Butter

1 Chicken Stock Cube

300ml water

1 small brown onion

1 carrot

28g Cream Cheese (plus one extra tbsp for serving)

60g Clotted Cream or Double Cream 

8ml Sriracha Chilli Sauce

1tsp Oregano

Fresh Parsley to serve (optional)

This quantity of Sriracha does not make this soup spicy. It just gives it a warmth so don’t be afraid of using it.  I would happily serve this soup to my children with this level of sriracha in it.

How to make this super quick chicken soup

  1. Put water into a saucepan and crumble in your stock cube.  Bring to the boil – the stock cube will dissolve as it heats up.  Give it a stir along the way
  2. Chop your onion and carrot into small pieces (dice)
  3. Chop your chicken breast into small pieces – you want it to cook quickly 
  4. Add vegetables, oregano and raw chicken to the boiling stock and reduce the heat to simmer for around 5 mins
  5. Add butter, cream, cream cheese and Sriracha and stir again whilst simmering gently for a further 5 mins
  6. Serve in bowl with fresh parsley and a tbsp of cream cheese in the middle
  7. Enjoy!

This recipe for delicious and super quick chicken soup is one of my personal favourites and one that came about because I had a cold and wanted chicken soup, but didn’t have any in the cupboard and didn’t have time to make the long winded version I had made in the past.  I looked in the fridge and the cupboard and used what I had!  Now it is an absolute go to for me for those days when I look outside and its a bit miserable.  A homemade chicken soup never fails to cheer me up.   This one has a warmth about it that feels like a big cuddle.
