Cajun Sea Bass with Salsa
This is a bit of a treat dish as sea bass is not the cheapest, but it does work as a family meal and is also good if you are ever doing a dinner for friends or even just having a couples dinner at home and want something a bit special. You could also try this with a cheaper fish such as Pollock.
For Cajun Mix:
- Sea Bass Fillets
- 40g melted butter
- 1/2 tsp oregano
- 1/2 tsp basil
- 1/2 tsp thyme
- 2 1/2 tsp paprika
- 1 tsp cayenne pepper
- Salt and Pepper
For Salsa:
- 4 plum tomatoes, deseeded and chopped
- 1 red onion, chopped
- 1 garlic clove, chopped
- 4 tbsp olive oil
- 1 tsp fresh lime juice
- 1 tbsp chopped coriander
- 2 chopped spring onion
- Salt and Pepper
Method:
- Mix together spices
- Pour melted butter onto both sides of the fish
- Sprinkle the Cajun spices over each side. Set aside
- Mix all salsa ingredients together
- Fry fish – dry fry skin side down first for 3-5 mins on each side
- Serve with salsa
To make into a family friendly meal I just do the kids fish without the cayenne pepper and I serve it with boiled rice alongside the salsa
